Pasta Alla Vodka

A perfect quick meal with maximum comfort!

1 tbsp olive oil

1 garlic clove

1 tin tom, blitzed

Salt, pepper, chilli flakes

250g rigatoni

1 large tot vodka (50ml)

125ml double cream

Start by frying the garlic in a medium saucepan until fragrant, do not burn! Add the tomatoes and a large pinch each of salt, pepper and chilli flakes. Simmer for 30 minutes on low heat until thick. Taste and season.

When the sauce is ready, heat a large pot of salty water until bubbling vigorously. Add the pasta and cook as per packet instructions. While the pasta is cooking whip the cream until slightly thickened.

Once done, spoon the pasta over the tomato sauce. Pour over the vodka while hot and mix through. Stir in the cream, toss well and serve with a good sprinkling of pecorino or parmesan.
