Our rocket & pumpkin seed pesto isn’t just great on pasta, it can be used for so much more!
Spinach, feta & pesto tart
Simply lay out bought puff pastry, cut into 3 and use on of the pieces, returning the rest to the fridge. Cut the pastry in half. Spread 1 tbsp of pesto onto each piece, leaving space around the edge. In a bowl mix 200g wilted spinach, 1 handful chopped parsley and 100g crumbled feta. Place this on top of the pesto. Brush the edges of the tarts with egg and then pop in the oven at 180 for 15 minutes. Serve with a simple rocket salad.
I love using this pesto to make soup more interesting and give it a lift. Try it on this parsnip soup recipe, it’s really delicious!
Mix 1 tbsp pesto with 1 tbsp olive oil and juice of half a lemon. This makes a great dressing to drizzle over roast chicken, grilled aubergine, mozzarella and tomato salad or even use on a simple green salad.
Mix 2 tbsp of pesto with 30g of breadcrumbs to make the best mac and cheese topping!
Toast & Sarnies
Poached eggs on toast, grilled cheese sandwich, fried spinach and mushrooms on toast, chicken mayo sarnie. Non of these wouldn’t be made better by rocket pesto!
